METHOD


Thaw the desired amount of Van Dyck Corn & Capsicum Pancakes.

SALSA


Combine all ingredients in a mixing bowl.


Cover and refrigerate for at least one hour.


SAUCE


Combine sour cream, lime juice, garlic and generous-sized pinches of the spices and stir.


TO SERVE


Heat two pancakes per plate.


Dress each plate with a small bowl of salsa.


Drizzle over the sauce.

4 Garlic Cloves, minced

1/2 Red Onion

1 c Tomatoes, chopped

1 Jalapeno Pepper, seeded and chopped finely

1 tsp Olive Oil

1 tsp Balsamic Vinegar

1 tsp Cumin

1 tsp Fresh Cilantro, chopped

Sauce

3/4 c Sour Cream

1/2 Lime, juiced

1 Garlic Clove, minced

Cayenne Pepper

Cumin

Cinnamon
